DIRECTIONS
- In a large mixing bowl, combine milk, yogurt, oats, honey and cinnamon; stir to blend well.
- Lightly but thoroughly fold apricots into oatmeal mixture.
- Cover. CP: Refrigerate at 41°F (5°C) overnight or for at least 3 hours.
- Transfer to a (12 x 20 x 2½-inch) steam table pan. CP: Hold for cold service at 41°F (5°C).
RECIPE NOTES

- It is pertinent that the oatmeal ingredients be chilled at least 3 hours to insure that the oats absorb the moisture, to blend flavors fully and to obtain proper consistency. Allowing the oatmeal set overnight is preferable.
- Overnight oatmeal is a cold cereal that can be served chilled on the breakfast line in a steam table pan or as individual servings for grab and go.
- Serving Suggestion: This item would make a great grab and go option. In a single serve plastic cup, add ¾ cup of the chilled oatmeal and top with 1 tablespoon of almond slices and/or sprinkle of cinnamon.
